The pinnacle of the brewers’ art, requiring the most precise and labor intensive methods, this Junmai Daiginjo is brewed from hand selected Yamada Nishiki rice grains. Each grain is polished over 50%, and hand washed three separate times in varying water temperatures to rid every minute flaw and impurity. Those select grains are then added to naturally soft water, the finest all natural ingredients, and prepared in a proprietary method that has been handed down from generation to generation.
The result is a wonderfully clean, pure and smooth tasting product that is light, complex and fragrant, with hints of spice and earth notes that will entice and engage the palette.
